Fool Proof Pairing for the Festive Season

Embrace your inner sommelier with our fool proof wine pairing tips to impress your guests during the festive season.

The theory is really quite simple; wine and food should be treated like partners, both embodying the same level of intensity and flavour. Essentially, food that’s rich in flavour requires a rich, lingering wine that won’t fade in comparison. In contrast, lighter meals will pair perfectly with delicate wines that won’t overwhelm the flavours on the plate.

So whether you’re turning up the heat with a classic Aussie BBQ, dusting off your fine china or keeping it low key with a family picnic, let us assist you with the perfect wine pairing guide so you can have yourself a merry little Christmas.

Drink Pink - Let’s assume that the Christmas table will be adorned with fresh seafood. A crisp, dry Rosé is the perfect wine to enjoy alongside the delicate flavours. Nothing says Christmas in Australia quite like a baked leg of ham and a great Rosé has enough weight and bright fruit to match any Christmas ham.

Try: 2018 Old Station Rosé

Sizzling Selections - Fire up the grill with a classic Aussie BBQ this Christmas. Grilled BBQ meats such as steak and lamb mean you’ll want to have a red wine on hand with big, rich fruit flavours and structure. South Australia’s premier regions are perfect to explore for wines with intensity and length. Barossa Shiraz and Coonawarra Cabernet Sauvignon are both perfect BBQ partners.

Try: 2015 Blockers Cabernet sauvignon

Christmas Classics - For roasted chicken or turkey dishes you need to choose a wine that will highlight the natural sweetness and tenderness of the meat. We recommend reaching for a crisp Chardonnay, especially with traditional sides and sauces. This also extends to baked salmon if accompanied with butter and cream, a little bit of oak will beautifully highlight the fish and balance the delicate flavours.

Try: 2018 Blockers Chardonnay

A Vegetarian Christmas – Chargrilled veggies, nut roasts, mushroom risotto golden grilled haloumi skewers are all wonderful alternatives to meat. Serve with a beautiful big salad and a couple of bottles of chilled Rosé Or Semillon for a meal fit for a (vegetarian) king or queen!

Try: 2018 Old Station Rosé

Perfect Picnic - Keeping it simple with a picnic by the shore? Shucked oysters and freshly peeled prawns go hand in hand with Riesling, especially when served with a touch of lemon, capers, butter sauce or Asian-inspired dressing. When it comes to food matching with Riesling, simplicity, delicacy and freshness are key.

Try - 2018 Old Station Riesling

Something Sweet – Who doesn’t love a Pavlova? With its crisp meringue, rich cream and summery flavours of mango, berries, cherries and a squeeze of passionfruit, it’s the ultimate festive dessert. Rose lends itself to the sweetness of the pudding without

Try: 2018 Old Station Rosé

Something for everyone - If it is variety that you are after, something to suit tha array of flavours or wine preferences around the table, why not try our Discover Coonawarra mixed case of wine? These carefully selected wines are made in true Coonawarra style, sourcing the best possible fruit, and combining the powerful influence of the rich red soils of our vineyards, our experience of the land and skilled winemaking to create world renowned wines. There is something for everyone.

Try: The Discover Coonawarra Mixed Case

No matter the spread, we are sure these tips will impress your guests! By pairing the plate with their plonk we guarantee you’ll be the host

Brand's Laira 2019 Vintage Update

“Conditions through the growing season were relatively mild; December and January only saw a few short hotter spells with mostly warm sunny days in between. February was then quite cool and overcast, with colder nights slowing down the ripening process somewhat. This meant there was plenty of time for flavour development on the vines. Our 2018 winter was drier than average, but we experienced several rainy periods through flowering and fruit set which kept Trent and the team busy protecting the grapes from possible disease. Overall, the vines are looking healthy and balanced; if the weather continues to be kind to us 2019 vintage is shaping up to be a great one!

This year we are trialling leaf plucking in some of our Cabernet Sauvignon blocks to see if we can improve quality in what is a slightly cooler, later vintage. It will also be our second year running the Bucher Vaslin optical sorter; we saw fantastic quality gains in 2018 and we are hoping for the same for 2019.”

A Coonawarra Christmas.

If you’re entertaining family and friends this Christmas and looking for some inspiration, here is what the Brand’s Laira team will be enjoying around the festive table.

“I am really looking forward to relaxing and spending quality time with my family this Christmas – it’s been a busy year! Our Christmas feast will include a large leg of ham and crème brûlée, all paired with crisp and refreshing Brand’s Laira Old Station Rosé – my favourite drop at this time of the year!!” – Isabelle Robinson, Cellar Door.

“Definitely planning on starting the day opening presents with a glass of Brand’s Laira Old Station Riesling in hand! While I am missing a white Christmas in Maryland with my family this year, I am going to hop in the kitchen to prepare an extra-large turkey for everyone to enjoy at my in-laws. I am pairing the turkey will some of our 1968 Cabernet Sauvignon, the rich deep fruit flavours are a great match for this versatile meat” – Kevin Haggerty, Cellar.

“A quiet Christmas is on the cards this year - just family and the beach in Kingston! We will relax with a BBQ lunch of prawns and scallops, followed by baked ham and salads - complete with a rocky road ice cream cake. Our Brand’s Laira Blockers range will definitely be our drops of choice (all three: Chardonnay, Shiraz and Cabernet Sauvignon) and we might even sneak in a bottle of Stentiford’s Shiraz!” – Mel Northam, Cellar Door.

Helping to reduce the risk of Phylloxera

South Australia has some of the oldest commercial grapevines in the world and this is largely due to the fact the state has never had an outbreak of Phylloxera.

Phylloxera [fihl-LOX-er-uh] is a tiny insect that attacks the roots of grapevines. Phylloxera sucks the nutrients from the roots and slowly starves the vine, creating a dramatic decrease in fruit.

The phylloxera insect is a significant threat to the health of vineyards across Australia. It does not affect the taste of the resulting wine however eventually replanting is required.

The small insects can also survive and travel in tiny particles of soil on vehicles, tyres, equipment, clothing and shoes.

South Australia, including Coonawarra, is a declared Phylloxera-free state – and we’d like to keep it that way!

Like other Cellar Doors in the region, visitors to Brand’s Laira are asked to observe signs at all times. If you are on a designated walking trail, keep to the track and do not walk or drive further than the trail indicates.

Additionally, if you have been in or near vineyards interstate, please ensure your shoes have been cleaned.

For more information and resources about Phylloxera, visit Vinehealth Australia website.

Thank you for your co-operation and we hope to see you at the Brand’s Laira Cellar Door soon!

What’s your perfect weekend in Coonawarra?

If you’ve visited the Limestone Coast in South Australia before, you know what a magnificent region it is (and how lucky we are to live and work here!) However, since it’s a good few hours – between 4-6 hours from either Melbourne or Adelaide - it’s definitely off the beaten track for a typical food and wine weekend getaway. That being said, it’s well worth the visit!

Recently, Fairfax good food visited the region and shared their ‘must-visit’ picks for Coonawarra. Here’s a few of their recommendations – which we couldn’t agree more on!

Drink Ottelia + Eat Fodder   – indulge in delicious (yet so simple) wood fire pizzas or a share platter of fresh produce. After a long road trip from Adelaide or Canberra, or transfer from Mt Gambier, this local haunt is a welcomed pit stop before the wine tasting begins!

Cellar Door visits – did someone say wine tasting? The great things about Coonawarra is that there are around 20 cellar doors to visit, including of course Brand’s Laira. If you’ve got limited time or you’re not sure where to start, the team at Coonawarra Experiences are a good place to start. They can create a tailored Coonawarra adventure for you, complete with transfers.

Pipers of Penola – the actual town of Coonawarra is tiny so lucky for visitors Penola is only ten minutes up the road and has a number of delicious cafes and restaurants to choose from. Pipers of Penola is a long-time favourite amongst locals and visitors in the mood for a night out. With an impressive wine list and inspiring contemporary Australian dishes to match, a gastronomy experience at Pipers is not to be missed.
